Hello everybody and welcome back to my blog! Today I’m bringing to this blog a food related post. Because it has been such a long time since I didn’t share a recipe here. So keep reading to discover how to do shaped glass cookies and what to put inside.
I find this recipe really yummy and perfect for Spring days. There are multiple way to make them and what’s best, you can fill them with whatever you like.
I made his recipe last weekend with my mum and sister to celebrate Father’s day because in Catalonia is typical to eat Catalan cream this day. For those who doesh’t know what Catalan cream is, it’s the cream that we used to fill the cookie glass. So we decided to make our own version of it by putting this cream inside some original cookies and by adding some strawberries.
Now, it’s time to let you know the ingredients to make this delicious recipe!
FOR THE COOKIES: (for eight cookies)
- 100 grams of butter
- 2 spoons of brown sugar
- 255 grams of flour
- 5 grams of vanilla powder
- 1 egg yolk
- 20 grams of water
FOR THE CREAM:
- 1/2 litre of whole milk
- 2 whole eggs + 1 egg yolk
- 20 grams of maize
- 1 envelope of vanilla sugar
- 100 grams of sugar
TOPPINGS:
- 1/2 cup of strawberries
- 1 spoon of cocoa powder
And we continue with the recipe. These cookies are made from the mixture of two recipes, one is from Lékué and the other from Tupperware. So feel free to check out these webs to find this recipe and other delicious dishes as well.
The first thing we are going to do is to prepare all the ingredients for the cookies. Remember that the butter has to be at room temperature.
Then, we’ll mix all the dry ingredients and incorporate the butter little by little. After that, we are going to mix the butter with the flour with your hands.
Now it’s time to add the egg yolk and mix it again. Finally, add the water and mix the mixture until it becomes homogeneous. And when you got it, make a ball with it and let it rest for 20 minutes in the fridge.
After the rest time, fill the mould with the mixture until they become full. For this I used a special Lékue product, but I think you can also use a little plastic glass purl and put the mix around it. Finally, cook them in the oven for 20 minutes at 180 degrees Celsius.
Moving into the cream, we will first put the milk in a bowl of 1 litre and heat it up in the oven for 4 minutes at 750 watts. In another bowl, we add the eggs and the egg yolk, the maize, the vanilla sugar and the sugar. And we whip up the ingredients with a manual mixer.
Now we add the mixture to the hot milk and we mix it all with a manual mixer and we cook it for two more minutes. Next, we open the bowl, we mix it again and we let it rest for 1 minute. Finally, we cook it for 30 seconds more and we let it cool before using it.
And the fun part begins here! You can decorate your cookie glass how you want, but I did it this way. I first add it the cream and fill each of them. Then I cut some strawberries in small pieces and put it on top of it. And to add the final touch, I sprinkled some cocoa powder. Now they are ready to eat them!
This recipe tastes delicious and it’s pretty easy to do so I encourage everybody to try to do it. And if you do, tell me in the comments if you liked it!
